Cheeses: Paul Dischamp invests in Cantal and Puy-de-Dôme



Paul Dischamp is modernizing his production tool. The family business of cheese trading and ripening founded in 1911 accentuates the industrial dimension acquired by the purchase, from 2007, of two production units, including that of Saint-Nectaire (Puy-de-Dôme), where the cheese of the same name is made. The second production site, which had been taken over from a small cooperative, will leave Chambernon (Cantal) next summer to be reinstalled with new equipment in 2,200 square meters, in the town of Saint-Flour, about fifteen kilometers from distance.

“This manufacturing unit, which represents a global investment of nearly 8 million euros, will be entirely dedicated to Cantal AOP, a quality product in the development of which we strongly believe ”, says Patrice Viala, CEO of the company. The annual production capacity of this cheese for aging, made in wheels of around 40 kilos and currently matured in Murat (Cantal), will then be able to increase from 500 to 1,500 tonnes, with a workforce doubled by a dozen people.

This company of 200 employees, led by representatives of the third and fourth generations of the founding family, expects to record a decline in sales of less than 5% in 2020, due to the slowdown in restaurant activity. Present in most distribution networks (supermarkets and medium-sized stores, dairies, wholesalers, etc.), in recent years it has posted sales of between 70 and 80 million euros.

Extension to Saint-Nectaire

“More than 80% of our production of around 6,600 tonnes is made up of the five Coronavirus: sales of appellation cheeses have halved d’Auvergne: Cantal, Salers, Bleu d’Auvergne, Fourme d’Ambert and Saint-Nectaire, of which we are the leader and which represents more than half of our production ”, emphasizes Patrice Viala.

Based in Sayat (Puy-de-Dôme), the Paul Dischamp cheese factories, which transform the milk collected from 270 producers, will launch a new project next year: an extension of 2,000 square meters of the Saint-Nectaire site, for a investment of several million euros. This site will then approach 10,000 square meters, and its commissioning is scheduled for 2022. In addition, each factory will have a direct sales store for all of the group’s products.
