Brinjal – 400 grams
Mustard oil – 4 tbsp
Onion – one crushed
Garlic – 5 buds ground
Ginger – 1 inch (grinded)
A pinch of garam masala (dry grinded)
Coriander – 3 tablespoons (finely chopped)
Turmeric powder – 4 tsp
Red chili – 4 teaspoons
Coriander Powder – 2 teaspoons
Fennel powder – half a teaspoon
Green chili – 2 (finely chopped)
Asafoetida – 1 pinch
Salt – as per taste
Mango powder – ½ tsp
Method of making
First wash the brinjals and apply 4 cuts on them in such a way that their stalk portion remains attached. Now pour a teaspoon of oil in a vessel and add coriander powder, fennel powder, red chili powder, turmeric powder, turmeric powder, onion, ginger and garlic paste, green chillies, salt and mango powder to all the spices and fry them well. Take it.
Your spice is ready to be filled in the brinjal. Now fill the roasted spices in the chopped brinjals with the help of a spoon. After this, put oil in the pan and heat it. Now add cumin seeds. After this, add brinjals in it one by one and let them cook in the oil.
If there is no spice left over by filling in the eggplants, then put them on these brinjals as well. After this, cover it and let it cook. Cook it on low flame for a while. But keep checking the brinjals in between and keep turning. When they are cooked, add chopped coriander and serve it.
