-250 grams gourd
1 liter milk
-1/2 cup sugar
-1/4 cup sago
-1/4 tsp cardamom powder
-2 tsp chironji
Green food color (a pinch)
-2 tbsp cashew paste
-2 tbsp almond shavings
-2 tbsp ghee

This is how to make…

To make bottle gourd kheer, first put water in a vessel and soak sabudana for 1 hour. Heat milk in a pan on medium heat. When the milk comes to a boil, slow the gas and cook till the milk becomes thick. Peel the bottle gourd, grate it from all sides and separate the soft part inside it.

Now put 2 spoons of ghee in a pan on medium flame for heating. Add bottle gourd and fry for 5 minutes while stirring. Switch off the gas only when the gourd becomes soft. When the milk thickens, add sabudana and cook for 10 more minutes. Now add roasted gourd and cashew paste in milk and mix and cook for 10-12 minutes.

After 10 minutes, add cardamom powder, chopped almonds, chironji, green food color and sugar to the kheer and cook till it dissolves. After the sugar dissolves well, turn off the gas and keep the kheer in the fridge for 2-3 minutes. Your cold cold gourd kheer is ready. Enjoy it now.
